This season, the Art Institute of Chicago’s presentation of Matisse’s Jazz: Rhythms in Color has us thinking about bold palettes and expressive composition in a way that feels especially relevant to what we do every day.
Matisse’s Jazz: Rhythms in Color will be on view at the Art Institute of Chicago from March 7 through June 1, 2026.

Matisse’s cut paper works are fearless in their use of saturated color and simplified form. That confidence translates beautifully to the plate.
For us, food is visual before it is tasted. A vibrant carrot puree beneath perfectly roasted salmon. Ruby beets layered with bright citrus and fresh herbs. Deep green sauces, golden crusts, jewel-toned vegetables at the height of their season. Each element is placed with intention, creating contrast, movement, and harmony.
Just as a painter considers balance and negative space, we think about composition. A white plate becomes the canvas. Color creates energy. Texture adds dimension. The final result feels dynamic yet refined.
